HONEY
If wine is the poetry of the earth, as Neruda said, then honey is its anthology. It is a mirror that reflects and condenses the multitude of images and expressions of the place where it is produced, in its most unique and changing aspects. As unique as that place is, and as changeable as the weather and the seasons are. As unique as the combinations of flowers, plants, rain and sun that the bees encounter to make that honey are unrepeatable. Thus, Valgiano honeys are unique, non-standardised and unrepeatable. Produced strictly according to organic beekeeping practices, unfiltered and not subjected to any heat treatment, even minimal, carefully separated according to flowering periods, we have:
Golden and intense, with a delicate flavour and aroma enriched with floral fragrances that other flowers from the scrubland and countryside add to it in different ways each year.
Not pure, dark, rich in the typical bitter notes of this honey, but rounded off by the warm taste and aromas of honeydew, which bees mix together with chestnut nectar in different proportions each year.
A multitude of blooms; lots of alfalfa, clover, sunflowers, prunus and Mediterranean scrub.
It comes from the coast: the location is Lecciona beach, in the Migliarino San Rossore and Massaciuccoli Natural Park. The sea is the Tyrrhenian Sea, the same sea that mitigates the climate on the Valgiano vineyards and, on days when the south-westerly wind blows, carries its salt to the leaves of the olive trees. Here on these dunes, between the pine forest and the shore, bees gather nectar from the flowers of the Mediterranean scrub and the fields of helichrysum that stretch almost to the shoreline, giving the honey its unmistakable aroma. This is how Beach Honey is made, sweet but with salty notes, the helichrysum is pronounced and notes of liquorice and curry prevail. Initially, the consistency is that of an amber liquid until autumn, when mediumgrain crystals begin to form, preserving the aromas that can only be found on this beach on hot summer days.
