If wine is the poetry of the earth, as Neruda said, then honey is its anthology. It is a mirror that\nreflects and condenses the multitude of images and expressions of the place where it is\nproduced, in its most unique and changing aspects. As unique as that place is, and as\nchangeable as the weather and the seasons are. As unique as the combinations of flowers,\nplants, rain and sun that the bees encounter to make that honey are unrepeatable. Thus, Valgiano\nhoneys are unique, non-standardised and unrepeatable. Produced strictly according to organic\nbeekeeping practices, unfiltered and not subjected to any heat treatment, even minimal, carefully\nseparated according to flowering periods, we have: <\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Not pure, dark, rich in the typical bitter notes of this honey, but rounded off by the warm taste and\naromas of honeydew, which bees mix together with chestnut nectar in different proportions each\nyear.<\/span><\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t\t

It comes from the coast: the location is Lecciona beach, in the Migliarino San Rossore and\nMassaciuccoli Natural Park. The sea is the Tyrrhenian Sea, the same sea that mitigates the\nclimate on the Valgiano vineyards and, on days when the south-westerly wind blows, carries its\nsalt to the leaves of the olive trees. Here on these dunes, between the pine forest and the shore,\nbees gather nectar from the flowers of the Mediterranean scrub and the fields of helichrysum that\nstretch almost to the shoreline, giving the honey its unmistakable aroma. This is how Beach\nHoney is made, sweet but with salty notes, the helichrysum is pronounced and notes of liquorice\nand curry prevail. Initially, the consistency is that of an amber liquid until autumn, when mediumgrain\ncrystals begin to form, preserving the aromas that can only be found on this beach on hot\nsummer days.<\/span><\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

MIELE Se il vino \u00e8 la poesia della terra, come diceva Neruda, allora il miele ne \u00e8 l\u2019antologia. \u00c8 uno specchio che riflette, condensandole, la moltitudine delle immagini e delle espressioni del luogo in cui viene prodotto, nei suoi aspetti pi\u00f9 unici e mutevoli. Unici quanto \u00e8 unico quel posto e mutevoli quanto \u00e8 mutevole, il tempo e la stagione. Unici quanto sono irripetibili le combinazioni di fiori, di piante, di piogge e di sole che incontrano le api per fare quel miele. Cos\u00ec sono unici, non standardizzati e non ripetibili, i mieli di Valgiano. Prodotti strettamente secondo le pratiche dell\u2019apicoltura biologica, non filtrati e non sottoposti a nessun trattamento termico, neanche minimo, separati accuratamente a seconda delle epoche di fioritura, si hanno: Acacia Dorata e intensa, dal gusto e dall\u2019aroma delicato e arricchito di fragranze floreali che altri fiori della macchia e della campagna ogni anno le aggiungono in maniera diversa. Castagno Non puro, scuro, ricco delle tipiche note amare di questo miele, ma arrotondato dal gusto e dagli aromi caldi della melata, che le api miscelano insieme al nettare dei castagni in dosi ogni anno differenti. Millefiori Una moltitudine di fioriture; molta erba medica, trifoglio, girasole, prunus e macchia mediterranea. Spiaggia Viene dalla costa: il luogo \u00e8 la spiaggia della Lecciona, nel Parco Naturale di Migliarino San Rossore e Massaciuccoli. Il mare \u00e8 il Mar Tirreno, lo stesso mare che mitiga il clima sulle vigne di Valgiano, e che nei giorni di libeccio fa arrivare il suo sale fino sulle foglie degli ulivi. Qui su queste dune, tra la pineta e la riva, stanno le api che bottinano i fiori nella macchia mediterranea e sulle praterie di elicriso che si stendono fin quasi alla battigia e che conferiscono al miele un aroma inconfondibile. Cos\u00ec nasce il Miele di Spiaggia, dolce, ma con note salmastre, l\u2019elicriso si esprime in maniera marcata e prevalgono note di liquirizia e curry. Inizialmente la consistenza \u00e8 di un liquido ambrato fino all\u2019autunno quando iniziano i cristalli di grana media, che conservano inalterati quegli aromi che si possono ritrovare solo su questa spiaggia, nelle giornate calde d\u2019estate.
